Tuscan Roasted Red Pepper, Mozzarella, Balsamic Choppeditizer

Did you know that I spent the whole month of June in Tuscany? Well I did! It was the best vacation and most wonderful way to celebrate my 60th birthday. Yes, I know, I’m the luckiest woman on the planet. The Hubby planned it all. Because we’ve cycled many times with a tour group called Ciclismo Classico his first action was to ask the owner if she could steer us toward a Tuscan Villa for rent during the month of June. Just so happens one of their tour guides for Ciclismo owns a villa for just that purpose. Continue reading

Marinated Berries are so easy you’ll wonder why you haven’t made them before. Because I don’t bake (or don’t want to!) I’m always looking for an easy dessert to serve at our parties. I usually end up counting on guests to supply dessert. Not any more. Continue reading

Mason Jar TexMex Chopped

Mason Jar TexMex Chopped. Full Balanced Meal, make ahead, portable and ready when you are. The varieties are endless, but I had to start somewhere. Just about any Chopped can be a Mason Jar Chopped!
Mason Jar TexMex Chopped. I can't believe this is the first time I've Chopped a Chopped into a Mason Jar. It sure won't be the last! Delish and easy and portable!

Mason Jar TexMex Chopped

By ,

Honestly, I can’t believe that this is the first time I’ve Chopped a Mason Jar Chopped. It’s so easy to layer all the ingredients into the jar. When you’re ready to eat you just dump it all into a bowl and toss. This is a no brainer, for sure. Right up my alley, as it’s another “Template, Not a Recipe” method Chopped. The best thing about this process is that you can chop a Mason Jar Chopped ahead of time. Plus, it’s portable, if need be. Because you start the first layer at the bottom with the “soggy lettuce making” dressing all the ingredients stay fresh and crisp. I’d always thought of Mason Jar dishes for people who worked in offices and had lunch/dinner away from home. Not so! I made this in the morning, put it in the fridge before heading out to clients, and The Hubby and I shared this huge bowl when we convened for lunch. Continue reading

Lime, Green Onion, Roasted Tomatillo Guacamole

Lime, Green Onion, Roasted Tomatillo Guacamole

By ,

I can’t wait to share this new guacamole version with you. I’ve discovered yet another fantabulous way to make good use of the citrusy, healthfulness of the Tomatillo. Are you ready for a flavor twist to your guacamole? Roast a Chopped Tomatillo. They get soft and sweeter and blend in beautifully with the ripe avocado. You’ll need less lime juice because the tomatillo mimics the lime flavor.

When The Hubby tried this new version, he said, “It’s really limey”. I wasn’t actually sure if he thought that was a good or bad thing. But he kept dipping. He finally told me to put half the bowl away for another day or he’d eat the whole batch…It was a good thing I guess.

Guacamole is one of the tastiest ways to get healthful fat into your diet. Continue reading

Bare Naked Hummus

Bare Naked Hummus. A silky, smooth texture is what sets this Hummus apart from most homemade versions. Do I have your attention? :)

Got’chur attention didn’t I? Was it the “Bare Naked” part or the technique for this making hummus that got you curious? Be patient and I’ll explain both. :)

I don’t know about you, but I think Hummus is one of the most delicious, versatile and healthful dips/spreads/condiments you can make. It’s fast and easy to prep too.

Head’s up! I’m about to throw a little wrench into the “fast” part. Continue reading

Black Bean, Yam, Tomatillo, Zucchini, Baked Chopped

Have you ever wondered why chilies and peppers are super hot to some and not to others? Me too. So I did some investigating after using just a bit of chili in this Baked Chopped. It was still too spicy.

Lately I’ve been adding a little bit of chili heat here and there to my Chopped recipes. Have you noticed? Well, The Hubby sure has. Here’s our ongoing dialogue after taking the first bite of most of these “oh so slightly” spicy dishes. “It’s got quite a bit of heat” says The Hubby. “Oh man, I added just the teeniest bit of “name the chili…Jalapeno, Chipotle, Adobo. And it’s still too hot for you?”, says Me. Continue reading

Roasted Fennel “Basic Addition”

Roasted Fennel has a sweet, mild anise flavor and a slightly crispy texture. Roasting Fennel brings out it’s subtle personality. It’s the perfect veggie “Basic Addition” for Chopped recipes.

I am a Fennel convert. But it must be cooked in some way. When raw, it’s just too strong an anise flavor for The Hubby and I.

I sauté it into soups, but my favorite way to enjoy this nutritious veggie is to roast it. Continue reading

Spoon Lickin’ Good Tex-Mex Dip/Dressing

Dip or Dressing, “Spoon Lickin’ Good Tex-Mex” is so delish you’ll be lucky to get it into the bowl. It’s ranch, but taken to a new level. Smoky, slightly sweet and oh so easy to make. In fact you’ll want to make a double batch.

Have you ever made a dip/dressing that was so delicious it almost didn’t get into the bowl? That’s what happened when I made this Tex-Mex yumminess. It is truly “Spoon Lickin'” good! I found myself going back with my tasting spoon again and again to make sure it was just right! Wink, Wink! Honestly, I couldn’t believe how tasty this smoky ranch style dressing turned out. Tomatillos, Corn, Chipotle, Black Bean Soup Chopped

Cinco de Mayo is right around the corner. How about a big pot of soup to help you celebrate. Tomatillos lend a bright citrus punch. It’s a “Balanced Meal in a Bowl” for lunch or dinner!

Tomatillos, Corn, Chipotle, Black Bean Soup Chopped

By ,

In celebration of Cinco de Mayo I’m using another “new to me” ingredient. Tomatillos. Until I chopped one and sampled it raw, I really didn’t know what it tasted like. Whenever I’ve had Tomatillos in a dish they were fairly incorporated. I didn’t know what kind of flavor they injected into the recipe. Do you know? If you’re expecting a tomato you’ll be surprised. They have a mild citrus flavor and a firm texture, perfect for sautéing into soup. Happily, that was the perfect little flavor/color/texture boost I was looking for in this Soup Chopped. Not to mention the healthful benefits of adding yet another veggie to The Chopped Diet repertoire. Continue reading
