Honestly, I can’t believe that this is the first time I’ve Chopped a Mason Jar Chopped. It’s so easy to layer all the ingredients into the jar. When you’re ready to eat you just dump it all into a bowl and toss. This is a no brainer, for sure. Right up my alley, as it’s another “Template, Not a Recipe” method Chopped. The best thing about this process is that you can chop a Mason Jar Chopped ahead of time. Plus, it’s portable, if need be. Because you start the first layer at the bottom with the “soggy lettuce making” dressing all the ingredients stay fresh and crisp. I’d always thought of Mason Jar dishes for people who worked in offices and had lunch/dinner away from home. Not so! I made this in the morning, put it in the fridge before heading out to clients, and The Hubby and I shared this huge bowl when we convened for lunch. Continue reading

I can’t wait to share this new guacamole version with you. I’ve discovered yet another fantabulous way to make good use of the citrusy, healthfulness of the Tomatillo. Are you ready for a flavor twist to your guacamole? Roast a Chopped Tomatillo. They get soft and sweeter and blend in beautifully with the ripe avocado. You’ll need less lime juice because the tomatillo mimics the lime flavor.

When The Hubby tried this new version, he said, “It’s really limey”. I wasn’t actually sure if he thought that was a good or bad thing. But he kept dipping. He finally told me to put half the bowl away for another day or he’d eat the whole batch…It was a good thing I guess.

In celebration of Cinco de Mayo I’m using another “new to me” ingredient. Tomatillos. Until I chopped one and sampled it raw, I really didn’t know what it tasted like. Whenever I’ve had Tomatillos in a dish they were fairly incorporated. I didn’t know what kind of flavor they injected into the recipe. Do you know? If you’re expecting a tomato you’ll be surprised. They have a mild citrus flavor and a firm texture, perfect for sautéing into soup. Happily, that was the perfect little flavor/color/texture boost I was looking for in this Soup Chopped.
